Demand for beef is often explained in terms of beef consumption. In economic terms, demand means consumer willingness to buy beef. Decreasing consumption doesn't mean people want less beef. It usually means fewer cattle are being market. In fact, demand can rise whle consumption falls if consumers continue to purchase beef, despite higher prices.
This goes against conventional thinking that as price goes up, demand goes down, but in reality, we're seeing that desire for beef is so strong that consumers are willing to pay more fo ti. And this means that demand for beef is high.
